Pan Roasted Swordfish with Sauteed Tomatoes

Blow your guests away with this impressive swordfish recipe. Cook on high heat to give this seafood a lovely, golden coating. The simply seasoned swordfish is paired with juicy basil marinated tomatoes for a visual contrast that is picture perfect.
Serves 2
Basil Marinated Tomatoes
Ingredients:
1 Large Tomato
1/4 Cup Fresh Basil Leaves, Stems Removed
2 Tbsp. Olive Oil
1 Tbsp. White Wine Vinegar
Pinch Garlic Powder
Pinch Salt
Pinch Pepper
Directions:
Cube tomatoes and place on a platter. Place basil over the tomato. Whisk the remaining ingredients and drizzle over the basil and tomatoes. Cover and refrigerate for 1 hour.
Swordfish
Ingredients:
2 Swordfish Fillets (about 4oz each)
1.5 Cup Basil Marinated Tomatoes
2 Tbsp. Olive Oil
2 Tsp. Fresh Parsley; Chopped
Salt and Pepper
Directions:
- Pre-heat your oven to 425°F.
- Season the Swordfish with salt and pepper.
- Heat an oven safe skillet on high and add olive oil until smoking hot.
- Place the fish in the skillet and cook for 3 minutes. Flip the fish and place the entire skillet in the oven for 7 minutes.
- In the meantime, place the Basil Marinated Tomatoes in another skillet and sauté on high heat for about two minutes or until tomatoes are warm.
- Remove the skillet from the oven (remember the handle is HOT). Plate the tomatoes, followed by the fish. Garnish with chopped parsley.
