Pan Seared Salmon with Citrus Shrimp Ceviche

Ingredients:
Salmon
1-2 lbs. Salmon fillet, cut into 4-6 equal portions
Salt & Pepper
Shrimp Ceviche
1/2 lb shrimp uncooked
1/2 cup lemon juice
1/2 cup lime juice
1 can mandarin oranges
1 teaspoon salt
1/4 teaspoon pepper
1 red onion, chopped
1 red bell pepper, chopped
1-2 avocado, diced
1/4 cup cilantro Juice
1 lime
1 lime, zested
Serves 4
Directions
1) Cut the shrimp into 1/2 inch pieces and transfer to a large mixing bowl. Juice 1 lime and 1 lemon and add to shrimp. Let marinate until shrimp is fully cooked.
2) Combine all remaining ingredients in another bowl. Once shrimp is done, add to mixture and serve chilled.
3) Season salmon with salt and pepper. Add olive oil to pan and cook until salmon reaches at least 145 degrees F.
