Salmon Chocolat

With a name like Salmon Chocolat you know you are in for a treat. Three main steps allow key ingredients, like white chocolate and orange liqueur, to infuse into the side and sauce for a truly one-of-a-kind taste. Apart from most cooking techniques, this salmon is set to simmer in seasoned water so no moisture is lost and only essential flavors are added.

Ingredients
For the White Chocolate Mashed Potatoes:
1 lb Russet potatoes, cleaned and peeled
4 oz white chocolate
2 oz unsalted butter
salt, to taste
Preparation:
Boil potatoes until soft, then drain. Using a double-boiler, melt the white chocolate. Add the melted chocolate to the potatoes and mash. Add butter and salt and continue to mash until texture is consistent.
For the Citrus Sauce:
4 oz. unsalted butter
1 whole shallot, diced
½ cup orange liqueur
4 oz heavy whipping cream
1 ½ cups orange juice
Preparation:
Melt 1 oz. butter in a sauté pan and cook the shallots for 2 minutes. Add orange liqueur and reduce by half. Add orange juice and reduce by half again. Add remaining butter and cream, cook until butter is melted.
For the Salmon:
4 (6 oz.) Salmon
1 small carrot, chopped
½ onion, chopped
1 oz lemon juice
½ gallon water
1 oz salt
Preparation:
Combine water, carrot, onion, lemon juice, and salt in a large pan and bring to a simmer.
Then, add Salmon and simmer for an additional 12 minutes.
Remove Salmon from pan, serve atop the mashed potatoes, and top with citrus sauce.
